Also known as Jerusalem artichokes, Sunchokes are a tuber that is common throughout eastern North America. Despite it's name, it is not a type of artichoke and is only distantly related to them. But some do find they taste similar.
Sunchokes can be peeled and eaten raw for a nutty and savoury flavour. You can also try roasting them with oil and a blend of your favorite spices.
